    <p>Обоснована актуальность введения в практику надежного метода выявления фальсификации молока и молочной продукции сухим молоком. Цель работы заключалась в обосновании актуальности и технической возможности внедрения в отечественную практику метода анализа для определения наличия сухого молока в составе сырого, питьевого молока и другой молочной продукции, что необходимо для пресечения фальсификации. Сухое молоко – натуральный продукт с высокой пищевой и биологической ценностью, однако в Российской Федерации расширение его использования сдерживается предубеждениями потребителей, сложившимися в период высокого уровня фальсификата на рынке. Восстановление позитивного имиджа сухого молока требует внедрения надежных методов его выявления в составе молочных продуктов для прекращения практики необоснованного приписывания дефектов качества добавлению сухого молока. Создание таких методов представляет сложную проблему из-за сходства состава восстановленного сухого и пастеризованного натурального молока, в связи с чем применим мультимаркерный подход с использованием жидкостной хроматографии, масс-спектрометрии и других новейших методов. Отмечено, что подобные методы дают точный результат, но сложны в реализации. На основании анализа данных сделан вывод о целесообразности сочетания стандартизованных методов в два этапа: иммуноферментный анализ для отсева отрицательных образцов и мультимаркерный метод с определением лактулозы и фурозина для подтверждения положительной реакции. Внедрение приборного метода позволит решить два актуальных вопроса – раскрытие фальсификации недобросовестными производителями и защиту интересов добросовестных производителей, выпускающих качественную продукцию с использованием сухого молока.</p>

   <trans-abstract xml:lang="en">
    <p>Milk powder is a natural product with high nutritional and biological value. However, its use in Russia is hampered by consumer prejudice; consumers tend to attribute poor sensory properties of milk to milk powder. Restoring a positive image of milk powder requires reliable methods for detecting it in raw milk, drinking milk, and other dairy products to prevent adulteration. This task is challenging because the composition of reconstituted milk powder is highly similar to that of pasteurized natural milk. This article describes a multimarker approach using liquid chromatography, mass spectrometry, and other cutting-edge methods. While such methods provide accurate results, they are difficult to implement routinely. Therefore, a two-stage protocol is feasible: an enzyme-linked immunosorbent assay screens out negative samples, while a multimarker method detects lactulose and furosine to confirm a positive reaction. This instrumental method addresses two pressing issues: uncovering milk adulteration and protecting reputable brands that utilize milk powder.</p>
