    <p>Заквасочные культуры молочнокислых бактерий играют ключевую роль в производстве сыров, определяя органолептические характеристики, микробиологическую безопасность и сроки хранения продукции. В современных условиях, характеризующихся ограничением импорта биотехнологических препаратов, особое значение приобретает поиск и использование отечественных штаммов, обладающих не только заквасочными, но и пробиотическими свойствами. Это открывает перспективы создания функциональных продуктов, сочетающих традиционные характеристики сыров с дополнительной пользой для здоровья потребителей. Цель работы – оценка потенциала ряда молочнокислых бактерий (Enterococcus faecium, Lactobacillus acidophilus, L. plantarum, Weissella thailandensis) с перспективой их дальнейшего использования в качестве заквасочной культуры. Наибольшую антимикробную активность против Escherichia coli проявили L. plantarum (B-11264) и W. thailandensis (B-10412), E. faecium (B-4054) и L. acidophilus (B-2585), которые обладали кислотобразующей активностью, способствуя снижению pH молока. При этом их устойчивость к повышенным концентрациям NaCl носила штамм-специфичный характер: содержание 2–4 % соли в объеме питательной среды не ингибировало рост микроорганизмов, а содержание 6,5 % соли приводило к подавлению накопления биомассы у всех исследованных микроорганизмов. Исследование биосовместимости показало отсутствие антагонизма между отобранными штаммами, что подтверждает возможность их совместного использования в консорциумах. Целесообразным является провести оценку комплексного воздействия штаммов E. faecium (B-4054), L. acidophilus (B-2585) и L. plantarum (B-11264), обладающих выраженным ферментативным потенциалом и стабильным ростом в экспериментальных условиях. Предположительно, использование консорциумов является перспективным для разработки отечественных заквасочных культур с пробиотическими свойствами. В дальнейшем требуется изучение биопотенциала консорциумов, содержащих различное соотношение выбранных штаммов, для оптимизации технологических процессов в сыроделии.</p>

   <trans-abstract xml:lang="en">
    <p>Starter cultures of lactic acid bacteria define the sensory profile of cheese, as well as its microbiological safety and shelf life. Under the current import restrictions, Russia needs efficient domestic starter strains with probiotic properties. Research in this sphere opens up prospects for new functional cheeses that combine conventional sensory properties with health benefits. The authors tested Enterococcus faecium, Lactobacillus acidophilus, L. plantarum, and Weissella thailandensis for starter culture potential. The highest antimicrobial activity against Escherichia coli belonged to L. plantarum (B-11264) and W. thailandensis (B-10412). E. faecium (B-4054) and L. acidophilus (B-2585) demonstrated strong acid-forming effects, which contributed to a decrease in pH. Their resistance to high NaCl concentrations was strain-specific: while 2–4% NaCl inhibited some cultures, 6.5% NaCl was able to inhibit them all. The biocompatibility test revealed no antagonism between the strains, which confirmed good consortia prospects. Strains B-4054, B-2585, and B-11264 demonstrated a reliable enzymatic potential and steady growth under the experimental conditions. In the future, they may provide a strategic alternative to imported probiotic starters. Research prospects involve optimization of cheese production technology by using these strains in microbial consortia.</p>
