   <abstract xml:lang="ru">
    <p>Разработана методика синтеза селенсодержащих наноразмерных систем, стабилизированных биологически активными веществами. В качестве стабилизатора был выбран бычий сывороточный альбумин, селенсодержащим прекурсором являлась селенистая кислота, а восстановителем – аскорбиновая кислота. Проводили фотонно-коррелляционную спектроскопию, установили, что средний гидродинамический радиус составляет 40 нм. В результате физико-химического анализа было установлено, что разрабатываемая добавка не оказывает существенного влияния на титруемую кислотность и активную кислотность среды, однако влияет на органолептические показатели кисломолочного продукта. Дегустационная оценка показала, что органолептические свойства кисломолочного продукта с добавкой наноразмерного селена выше, чем у контрольного образца.</p>

   <trans-abstract xml:lang="en">
    <p>The article introduces a new method of synthesizing selenium-based nanosystems stabilized by biologically active substances. Bovine serum albumin served as the stabilizer with selenic acid as the precursor and ascorbic acid as the reducing agent. The method of photon correlation spectroscopy demonstrated the average hydrodynamic radius of 40 nm. The physicochemical analysis revealed no significant effect on the titratable or active acidity of the medium. However, the additive improved the sensory profile of the final fermented product.</p>
